Do you have any advice on how to adjust the contrast/ white balance? I've looked for software, or a menu, and can't find it anywhere
I'm using two tungsten lights, and they are pretty strong. It washes me out..
Lighting umbrella's may help with them tungsten lights or bouncing the light of a white wall or ceiling, that way you can point the lights at them to diffuse the light. The camera the EVI-D30 has according to the manual Auto White Balance but you can play with how the back lighting works and the image.
I have uploaded the Adobe PDF versions of the manual and brochure for you to check out how to set the camera features and what to press on the remote etc. To open these files you will need Acrobat Reader from Adobe you can get from here if you don't have it.

Also careful when you point the lights at walls they do get very warm and don't have them near anything that can catch fire easily

, Like I said lighting umbrellas are designed for high power lights and will work best, just google "lighting umbrellas" and you will see what I mean.
Good example how they are used in this picture.
